Prior to Longview Brewhaus John Pratt brewed at home Paula’s Bitter Ale I, Monkey Ale, and Wild Cat Ale.
Paula’s Bitter Ale II, Brew Master John Pratt
Brewing Notes: Made with a Brewer’s Best Double IPA package. Ingredients, Fermentables: 9.9 lb. Light LME, 1 lb. corn sugar; Grains: 8 oz Caramel 40L, 4 oz Carapils; Hops: 4 oz Columbus Flavoring, 2 oz Bittering, 2 oz Flavoring, 2 oz Zythos Aroma; yeast, priming sugar. Brewed 02-17-13. Bottled 03-10-13.
Tasting notes: excellent tasting beer, the best hoppie beer. 12-19-13: going over hill, flavor and nose are going bad, musty, head is ok. 04-12-14: an excellent hoppie beer, has mellowed a bit; big hop infused beer.
Russian Imperial Stout I, Brew Master Tracy M Shepard
Brewing Notes: Made with a Brewer’s Best Russian Imperial Stout package Ingredients, Fermentables: 6.6 pounds Dark LME, 2 pounds DME, 8 oz maltodextrin; Grains: 8 oz caramel 60L, 8 oz roasted barley, 8 oz black patent; Hops: 1.5 oz Northern Brewer; yeast, priming sugar.
Tasting Notes: aged very well, nice RIS.
Belgium Pale Ale, Brew Master Tim Hazen
Brewing Notes: Brewed 10-06-13, bottled 11/3/2013.
Tasting Notes: flavorful, hoppie, powerful, color is great, head is #1, might age well. On 04-12-14 it was noted to have gathered body.
Revolutionary Ale, Brew Masters John, Tim, Tracy
Brewing Notes: Ingredients supplied by the Hop Shoppe. Ingredients, Hops: Warrior, Columbus, Cascade. Brewed 04-27-13, transferred to carboy 05-18-13
Tasting Notes: nice summer ale, targeted to a broad consumer wing. Made for 4th of July party 2013.
Paula’s Bitter Ale III, Brew Master John Pratt
Brewing Notes: Ingredients supplied by the Hop Shoppe from a list for beer called, Illini Pale Ale. Ingredients, Fermentables: CBW Golden Light DME 6 lb, Munich Malt 1 lb, Crystal Malt .5 lb; Hops: Amarillo .5 oz, Mosaic .5 oz, more Amarillo .5 oz and Mosaic .5 oz, Australian Galaxy, Citra, then dry/leafy hops 2 oz added after fermentation; Yeast, American Ale.
Tasting Notes: powerful, sweet, full bodied, sharp citrus front, long taste that goes on, good nose.
Lake Bloomington Russian Imperial Stout II, Brew Master Tracy M Shepard
Brewing Notes: Ingredients came from Hop Shoppe on 11/22/13, from a brewtoad.com recipe. Brewed 11-24-13, transferred 12-11-13. Ingredients, Fermentables: Golden Light DME 6lb, Traditional Dark DME 3 lb, 2-Row Chocolate .5, Roasted Barley .5, 2-Row Carapils .5, Honey Buckwheat .5; Hops, Northern; Yeast, from prior brew of American Ale. Grains were steeped in 2 gallons of water, poured ½ gallon over grains and then squeezed sleeve as grains removed. Sugar was added and beer bottled on 12/19/13. The Brewhaus was only 60 degrees and the yeast went dormant after bottling until temperature raised.
Tasting Notes: No after taste, sweet, high alcohol, smooth, scotch, smokey, full bodied, dark, not watery. Some of the bottles were not clean enough resulting in some skunky beer.
Pale Ale, Brew Master Tim Hazen
Brewing Notes: Ingredients came from Hop Shoppe, brewed on 04-12-2014. During brewing the grains smelled like cereal. Ingredients, Grains: 6 lb. of Golden Light; Hops: Citra, Australia, Falconer’s Flight, Mosaic. Transferred to carboy 05-13-14.
Tasting Notes:
Double IPA, Brew Master Tim, John, Tracy.
Brewing Notes: Ingredients from Hop Shoppe based on Brewer’s Best receipe. Brewed 05-13-14. Used all the yeast stuff at the bottom of fermentor from Tim’s Pale Ale. Intending to transfer to our first keg for the 4th of July party. The CO2 tank was connected on day two of the beer being in the key. Pressure set at 10 psi. Keg needs to be shook in order to incorporate the CO2 gas into the beer. Used graph to determine pressure setting. Kept keg in fridge while beer aged, fridge is around 37 degrees.
